Shelly’s Chicken and Rice Casserole
This is my take on an easy and quick chicken and rice casserole that your picky kiddos are sure to enjoy! My family loves it!! 
Ingredients:
Olive oil – for cooking chicken
Skinless Chicken (Boneless or Pieces)
1 small onion – diced
2 Cups Uncle Bens Rice (cooked)
1 can cream of chicken or cream of celery
1 cup of Miracle Whip Light
1 can of French Style Green Beans
1 cup of shredded cheese
Seasonings:
Dash of your favorite seasoning salt
Sprinkle of Garlic powder
Sprinkle of Cumin
Salt and Pepper
Drizzle olive oil in pan on medium-low heat. Cook chicken till done with onions and seasonings. Then mix rice, soup, green beans and mayonnaise into sprayed or buttered baking dish. Cook on 350°F for 25 minutes. Top with cheese and cook additional 5 minutes or till cheese melts. Enjoy!

Visit with Dad
I was able to spend some time with my Dad this past week. He came to visit me from Colorado. It was such a nice and relaxing time with him. I hate that he lives so far away from me, but I do cherish the time I can spend with him. God is STILL in the miracle performing business and my relationship with my father is living proof of that!
